I am a cookie fiend. I’m not afraid to admit it. I love cookies more than any other sweets, candy or junk food out there. And, of course, if they’re homemade than even better!!
I don’t make cookies often (cause they’ll be gone within 30 minutes of coming out of the oven), but when I do I don’t really get fancy. For years I’ve stuck to the same few cookie recipes and when it comes to the holidays I don’t variate. Why change a good thing? So my favourite Christmas cookies are really just my favourite Chocolate Chip Cookies with a holiday spin!
I’ve always followed the Martha Stewart recipe when it comes to my chocolate chip cookies. They’re so soft and gooey – and the perfect combination of salty and sweet. That’s the important part….mmmm salty! But for my holiday version I add one little step! I smash up a few candy canes and throw those in too! So simple, but really takes it up a Christmas-y notch!
Here’s the recipe:
2 1/4 cups all purpose flour
1.2 teaspoon baking soda
1 cup (2 sticks) room temp. unsalted butter
1/2 cup granulated sugar
1 cup packed light-brown sugar
1 teaspoon salt
2 teaspoons pure vanilla extract
2 large eggs
1 cup semisweet chocolate chips
AND MY HOLIDAY ADDITION:
1 cup crushed peppermint candy canes
Preheat your oven to 350F. Whisk together flour and baking soda, set aside. Using an electric mixer is always better…but I don’t have one. So using your arm muscles combine the butter with both sugars until light and fluffy. Add salt, vanilla and eggs and mix well for a few minutes. Add the flour mixture until combined, then stir in chocolate chips and candy canes. Using a tablespoon drop balls of the dough about 2 inches apart on a parking sheet with a piece of parchment paper. Bake until golden brown, about 8-10 minutes!
Want them more cakey? Add less butter and less sugar. Want them thinner? Add more butter and more granulated sugar than brown sugar. Martha Stewart can explain it better here.
